Small orange flourless cake



2 large oranges

6 eggs

250g ground almonds

250g sugar

1 tsp baking powder



  1. Microwave the unpeeled oranges on high for 4 minutes or until soft.
  2. Beat the eggs in a mixing bowl.
  3. Place all ingredients in a food processor/blender and mix well.
  4. Pour into a buttered 24cm springform tin.
  5. Bake for 60 minutes in the oven at 180°C (150°C fan forced).
  6. Allow to cool in the tin.
  7. When cool, sprinkle with a thick layer of icing sugar.
  8. Enjoy!
