Small orange flourless cake
2 large oranges
250g ground almonds
1 tsp baking powder
- Microwave the unpeeled oranges on high for 4 minutes or until soft.
- Beat the eggs in a mixing bowl.
- Place all ingredients in a food processor/blender and mix well.
- Pour into a buttered 24cm springform tin.
- Bake for 60 minutes in the oven at 180°C (150°C fan forced).
- Allow to cool in the tin.
- When cool, sprinkle with a thick layer of icing sugar.
