Ingredients

170g desiccated coconut

250g caster sugar

100g cocoa

300g butter

3 eggs

500g marie biscuit, roughly crushed

Method

  • Mix the coconut, caster sugar and cocoa together
  • Melt the butter (don’t boil it!) and stir it into the dry mixture
  • Stir in the eggs and mix in the crushed biscuit
  • Press the mixture into a greased tin and refrigerate
  • Bake for 11-13 minutes at 170c in a fan-forced oven
  • Once cool, top with melted chocolate and a sprinkle of coconut
  • Enjoy!
